Fresh tomato salad
*2 large ripe tomatoes
*5 – 6 large fresh basil leaves
*½ bulb fresh garlic
1-2 Tbls. of olive oil
salt and pepper to taste
Cut tomatoes into cubes, put into flat dish. Chop garlic very finely. Cut basil leaves into very fine strips and then cut strips into smaller pieces.
Put garlic and basil on tomatoes and add olive oil. Stir quickly, cover with plastic wrap, and let salad sit for 30 minutes. (If you need to hold longer, keep in refrigerator, but take out of refrigerator 30 minutes before serving.
Immediately before serving, toss salad again and add salt and freshly ground pepper to taste. Serves 2.
Variations:
1. Slice tomatoes and layer with very thin slices of fresh mozzarella cheese or use cubed mozzarella w/cubed tomatoes, increase basil to taste.
2. Omit fresh garlic.
