Curly Kale w/Onions
*1 bunch curly kale cut or torn into pieces
*3 medium fresh (not dried) sweet onions
3-4 slices bacon (or turkey bacon)
1 Tbls. butter (if needed)
1 Tbls. brown sugar
Dice bacon, put in frying pan over medium heat. If you use turkey bacon you may need to add the 1 Tbls. butter. Peel one outer layer from each onion. Cut each onion in half vertically and then cut each piece of onion into thin slices. Add sliced onion to bacon in pan. Cover. Cook until onions are soft but not brown. When onions begin to look slightly clear, add brown sugar. Cook for one minute or until sugar is melted and spread evenly among onions. Add kale, cover until kale wilts. Remove cover and cook until any liquid is reduced into a slightly brown glaze. Stir until liquid is gone and kale reaches desired consistency. Serve immediately.
